Restaurants and Patrons have a unique relationship. It's a give and take on both sides. Chefs cook amazing meals straight from the heart. Patrons consume them, and then tell their friends about the restaurant. Word of Mouth is still the best form of advertising for restaurateurs.
The idea of teaching one of your favorite or popular meals to your loyal patrons (who want you to stay open for business) is an idea of bringing this relationship even closer together. Like any artist, I'm sure you are always trying to create... be it another beautiful meal to add to your menu, or an entirely new menu. Speaking for myself, on a Friday night just coming home from work, we're tired and don't feel like cooking and can't stop thinking about that favorite meal down at our local restaurant that we want to treat ourselves to!
